Confession- I didn't use my Instapot for a whole year after I got it as a Christmas gift because I was so scared of it! I had visions of the lid blowing off from the pressure cooker and my face getting burned by hot food. I know, I know, a little dramatic. Once I brought myself to finally watch some Youtube vids and figured out how to use it properly (and safely!), it became my favorite kitchen staple! I use it ALL the time now and it has saved me so much time being able to make healthy, home-cooked meals in minutes. I also must say, now that I know all of the safety features that the Instapot comes with, I no longer have the same fears as I did before!
One recipe that I make several days a week is this Instapot Oatmeal. It is ridiculously easy, healthy, and delicious! There's nothing like a warm bowl of steamed oats on a chilly fall morning let me tell ya! I dump in all the ingredients, set the timer, go get my son awake and dressed and come back to the kitchen for a hot and steamy breakfast waiting for us. Austin absolutely loves these oats, too, so it makes me happy knowing he is also getting a healthy start to his day!
